Fort Collins Recipe Ideas

It’s the holiday season and here are some Fort Collins recipe ideas.  To me the holiday season is all about food, family, fun and HOME!  I enjoy cooking and making the traditional foods that everyone looks forward to eating this time of year.  So much tradition can be tied to food.  You have the special meal that includes specific foods at Thanksgiving.  The whole month of December can be filled with family traditions surrounding food.  Every family has their own traditions surrounding the holidays.

I would like to share with you several recipes that are special to my family.  These Fort Collins recipe ideas have year around appeal.  Enjoy them and remember to also enjoy family, fun and HOME this time of year.

Crock Pot Lasagna

2 c. uncooked Rigatoni                         1 tsp. oregano

½ lb of cooked hamburger                   8 oz cottage cheese

½ c. onion                                                16 oz of both cheddar and mots cheese

1 clove garlic                                            ¼ c. parmesan cheese

29 oz jar of pasta sauce

¾ c. water

Mix together ground meat, onion, water and pasta sauce. Mix together cheeses.  Layer meat, pasta and cheese and repeat. Top with parmesan cheese.  Cover and cook on love for 3 and ½ to four hours.  This is great to have after a busy day of shoveling snow or shopping.

Blond Brownies

2 ½ c. flour                              ¾ c. brown sugar        1  pkg of vanilla instant pudding

1 tsp baking soda                   1 cup butter                 2 eggs

¼ sugar                                     1 tsp. vanilla                16 oz of chocolate chips

Combine sugars, butter, vanilla, eggs and instant pudding.  Once creamy mix in dry ingredients.  Add chocolate chips.  Batter will be stiff. Spread in 9 x 13 pan.  Bake at 350 degrees for 22 minutes. Enjoy!

Salsa Chicken

1 lb of boneless chicken breasts cut into bite sized pieces

2 tsp of taco seasoning

¾ c of bottled salsa

2/3 c. of cheddar cheese

1 (4 oz can) of green chilis

1 can of ripe black olives

Preheat oven to 425.  Combine chicken and seasoning.  Toss to coat.  Cook chicken in large non-stick skillet over medium heat.  Cook for 5 minutes or until browned. Arrange chicken in 8 or 9 inch square baking dish.  Top with salsa, chilies, cheese, and finally the olives.  Bake for 15 minutes.  Serve with sour cream and can eat with tortillas.  Quick, easy and good!
